Grilling with Infrared


There are three ways to cook:

  • Conduction
  • Convection
  • Radiation

Radiant heat generates much higher temperatures faster than the other two cooking methods. Working on the same type of technology as your microwave oven, an infrared grill allows your food to retain more moisture, as there is not hot air flowing around it to dry it out.  In a conventional gas grill, the flames heat the grates directly, but in an infrared grill, there is an infrared element between the grates and the flame.  The gas heats this element, which in turn radiates heat to the food.

Many professional and amateur chefs prefer this method as it cooks faster.  The grill heats up faster, is energy-efficient and is also super easy to clean.  In fact, infrared grilling is a hot trend in outdoor cooking, so much so that many grilling enthusiasts swear by a gas grill that uses infrared technology as the only heat source or as an optional burner.  

Saturday, our grill master Tim demonstrated this infrared technology on the TEC G-sport.  TEC introduced a radiant gas grill back in the early 80's.  Back then, TEC infrared grills used small flames to heat ceramic plates, and the plates then cooked the food.  Years later, you can still find ceramic plates used, but the grates of TEC's newer grills are glass panels that are directly over stainless steel burners.  

During Saturday's cooking demo, Tim grilled Italian sausages, marinated beef kabobs, apple-brined pork chops, and teriyaki bbq chicken.  Tim used Thomas' steak sauce, available here at Fleet-Plummer, to marinate the beef for the kabobs, and a brine of apple juice, brown sugar, kosher salt, pepper and red pepper flakes to spice up the pork chops, and brushed on the bbq sauce in the last few minutes of cooking the chicken.  Tim's favorite part of the demo:  how easy the clean up was!  He just heated the grill to high, closed the lid for 8 to 10 minutes and poof!  All evidence of grilling then just brushed away.
